Grilled Chicken with Lemon and Herbs
 
Boneless chicken breast is marinated with fresh lemon juice, olive oil, garlic and chopped herbs, then grilled to perfection. Served with an Orzo and Vegetable Side

Home Style
Turkey Meatloaf
 
A favorite. This meatloaf taste better than traditional beef meatloaf and is much better for you. Served with Roasted Garlic Potatoes and Julienne Carrots.
 
BBQ Chicken Quesadillas with Chickpeas
 
Whole wheat flour tortillas are filled with BBQ chicken and chickpeas mashed with garlic and scallions. A little bit of shredded Monterey Jack Cheese
puts these quesadillas over the top. Served with a Rice and Red Beans.

  
Italian Chicken with Sun Dried Tomatoes and Ricotta
 
Boneless chicken breasts are seasoned with breadcrumbs and filled with part-skim Ricotta cheese and sun dried tomatoes. Served with Basmati Rice Pilaf
and Green Beans with Shallots

Steak Fajita - Quesdadilla Style
Quesadillas are filled with seasoned cuts of lean steak, red and green bell peppers, onions and a spicy Monetary Jack Cheese.  Served with Spanish Rice.

Pork Loin with Figs and Port Sauce

 
Roasted Pork Loin is seasoned with rosemary and served with mission figs and a sweet port reduction.
Served with Rosemary Polenta and Roasted Carrots

Honey Glazed Pork Tenderloin with Fennel
 
Pork Tenderloin is roasted with fennel, rosemary, garlic and honey. Served with Parmesan Mashed Potatoes and Fresh Green Beans.


Pasta

Penne with Chicken Bolognese Sauce

 
A flavorful and healthier version of the traditional Bolognese Sauce is served over enriched penne pasta.

Pasta Primavera
Pasta is tossed with seasonal vegetables and a light sauce of olive oil, white wine and garlic.
 
Baked Turkey and Artichoke Stuffed Shells
 
Pasta shells are filled with lean ground turkey, low fat ricotta cheese, parmesan cheese, artichoke hearts and fresh herbs, and then baked in a fresh Marinara Sauce.

Bow Ties with Broccoli and Raisins
 
Bow Ties Pasta is served with a delightful sauce made with garlic, olive oil, fresh tomatoes and broccoli. The addition of raisins brings a touch of
sweetness and really makes this dish special.


Whole-Wheat Spinach Lasagna Rolls
 
This healthier version of traditional Lasagna is a real favorite. Made with fresh spinach, low fat ricotta, parmesan cheese and a zesty tomato sauce.

This fresh lemon pasta dish is wonderful tossed with grape tomatoes and baby spinach.

*A choice of a Garden Salad or Italian Green Beans accompanies pasta dishes.

*Traditional pasta, whole-wheat pasta and enriched pasta is used at the discretion of the chef, to insure tbe best flavor and nutrition for each dish.

Eggplant Gratin
 
Fresh eggplant is sautéed in olive oil, then baked with low fat ricotta and a fresh marina sauce. Served with fiber-enriched pasta and sauce.

Risotto Cakes with Roasted Tomatoes
  
Homemade risotto cakes are prepared with spinach and parmesan. Plum tomatoes roasted with garlic serves a delicious topping
