Tender boneless chicken breasts are sautéed and served with a creamy Marsala Wine sauce and then topped with roasted mushrooms, pancetta and onions. Served with Classic Mashed Potatoes.

Chicken Parmesan
Boneless chicken breasts are coated with fresh breadcrumbs and parmesan cheese and then gently sautéed.  Can be enjoyed as is with Fresh Greens or served with an Italian Marinara Sauce and Pasta.

Chicken Marbella with Sweet Prunes, Olives & Capers
This classic dish is both sweet and savory. Marinated chicken is roasted along with garlic, capers, Greek olives and sweet prunes. A serving of Jasmine Rice helps soak up the delicious sauce.   

Barbequed Chicken Quesadillas with Chickpeas
This casual dinner is a favorite. A flour tortilla is filled with shredded  BBQ Chicken, scallions, Monterey Jack cheese and a garlicky-chickpea mash.  This very different combination of flavors is delicious. Served with Spanish Red Bean Rice.

This home-style dish is similar to a potpie except that the filling is baked as a casserole and topped with homemade herb biscuits. Real comfort food.

Apple Turkey Meatloaf
Back by popular demand!  This meatloaf is made with real apple slices and a sweet and sour apple flavored glaze that puts this dish over the top. Served with Mashed Potatoes with Chives.

Chicken Stuffed with Sun Dried Tomatoes, Artichokes and Fontina
A sweet and savory filling of sun-dried tomatoes, artichoke hearts and Fontina cheese is stuffed into tender boneless chicken breasts. Served with Rice Pilaf.

Tex Mex Taco Beef Pie
This dish is a potpie, Tex Mex style. Ground beef, red peppers, corn and black beans are baked in a pastry crust and seasoned with lots of southwestern flavors.

Shepherds Pie with Vegetables
Old-fashioned shepherds pie kicked up notch.  This pie is made with ground beef, onions, carrots, mushrooms and topped with a mashed potatoes sprinkled with parmesan cheese.

Steak Fajita- Quesadilla Style.
